Quinoa Soup Looks Like A Bowl of Mini Condoms


Seriously. Look closely at this bowl of soup I made recently, resplendent with the goodness of quinoa.



The grain quinoa has a lot going for it-high protein content with all the essential amino acids. High in fibre, iron and magnesium. (And tasty, too, once you rinse the bitter coating off the seeds. ) It just happens to look like a bowlfull of minature prophylactics or tiny worms in see-through shells, something I actually had a hard time getting past at first.

But once I did, I made this soup...super nutritious and high in protein.



Pump the Protein Quinoa Soup
(Makes four ¾ cup servings)

In a fairly large pot, add:

2 tsp olive oil
1 medium onion, chopped
¼ cup diced red bell pepper
~Sauté until onions are translucent~

Add:

1 large carrot, chopped
½ cup frozen corn niblets
¼ raw quinoa, rinsed to remove bitter coating
1/8 cup brown lentils
7 cups water
2 Tbsp tomato paste
2 Tbsp vegan beefy bouillon
2 Tsp paprika
¼ tsp black pepper
½ tsp salt
¾ tsp onion powder
¾ tsp garlic powder
1 tsp Italian seasoning
Allow to simmer for about thirty minutes, stirring occasionally.



Each serving has 135 calories and 5 grams protein

PS: I'm not ignorning your comments, truly I'm not. I'm going to take some time tomorrow and give them the in-depth, thoughtful, pithy answers they deserve.
