Four Days to Go and Counting!


Hi, everyone, and how the hell are you today?! I've been a very busy gal, in my kitchen cookin' up a storm. Why is that, you ask? Because next weekend I'll likely be dining on take out pizza. and/or whatever my very busy husband manages to throw together. The reason? I am scheduled for arthroscopic knee surgery this coming Wednesday, and I'll likely be chillaxin on the sofa for a few days after.
I went to see a very delighful surgeon last week, who told me (after much manipulation of my poor, sore knee which made me howl and want to slap him) that I had a "classic bucket-handle tear of the meniscus" and would need an operation. To which I replied, let's git 'er done, buddy, cuz I've been suffering for almost three months now. (In case you forget, I injured myself duing the summer while doing a very ungraceful swan dive in a puddle of dirty water in the ladies room.) I have great confidence in this dude's ability to fix me, especially because he had a very plush office and told me I was "his kinda woman." (In an admiring-my-spunk sort of way, and not in a crazy stalker sort of way.)

SO...to make a long story short, I am busy filling my freezer with all sorts of homemade goodies to get us through the coming week. For example, a big crockpot full of Maple-Apple Baked Beans. (Because I really, really want to pass gas on the operating table. )
I also made up some great bread and rolls, loaded up with lots of essential fatty acids in the form of a whole bunch of ground flax and pumpkin seeds.

Finally, I actually got to enjoy a night without the kids, (rowr) who are out spending the night in the woods with the Army cadets. I took the opportunity to make up a "messy lasagna" for Boobsie and I, chock full of mushrooms, zucchini, peppers, onions and spinach.

Today is Sunday, and I'm planning a humongous meal, sort of compensating in advance for the plethora of veggie burgers we're likely going to get NEXT weekend.

Hope the op goes swimmingly. I'm sure you will be playing leapfrog before long.

And thank you for asking about MY weekend. I have such a bad sinus cold that I've been begging my husband to remove my nose. But he reminds me that I'd look awfully funny without a nose. I am glad he is so sensible. On the food front, we are having falafels.

Those rolls look great. The one on the right kinda looks like my butt. Ha. The lasagna looks yummy, too.
I just got back from shopping--dragged the family through three stores. Sam's Club, where I bought a huge bag of basmati rice, along with giant bags of sweet onions and red potatoes. Then, it was off to Lee Lee's, an oriental grocery store which opened fairly recently on this side of the valley. First time there. I love oriental grocery stores. I can browse forever. Then it was off to Sprouts, the only place I can find Silk creamer. I can browse that store almost as long as an oriental grocery. Now the kitchen's loaded up with veggies, but I'm too tired to cook. Heh. Leftover chili sounds good.

I am happy for you that your knee will soon be back to its happy self. Enjoy being catered too, you will deserve it.

Everything looks great! Can you share your recipes for the bread and beans?
