Cape Breton Corncakes Start off a Day of Maxin' and Relaxin'!

Some people love pancakes, some people love waffles or french toast. But me, when I want to go out of my way and cook myself up a really special breakfast, I make myself some Cape Breton Corncakes.
This dish is a bit of a mystery in my family. It has been passed down in the family at least three generations. My Grandmother called them Cape Breton Corncakes, but I've never met a single Cape Bretoner who ate them. In fact, I haven't actually met a single person outside my family who eats them, and I find that weird, because they are so delicious, and so damn simple. And grandma had to get the idea from somewhere!
First, you take a 398 ml (14 oz) can of creamed corn. Then, you mix in 3 Tbsp of white flour, a generous dollop of salt and pepper, and 25 crushed saltine crackers.

Mix well, and let stand 30 minutes. (Or overnight in the fridge.)

Add a good slosh of vegetable oil to your frying pan. (Don't skimp; this is not the time to watch your waistline!)

Add the corn slop in nice little patty sized dollops. Let fry until starting to crisp, turn carefully, and cook on the other side. Turn a few more times. You want the heat on the low side of medium, as you want the cakes crisp but not burnt.

After breakkie, me and the brats headed for town in the 1994 Sunbird SE. (Although I love to drive my new car more, when I do drive this car I love to hear the rumble of all those ponies under the hood....and I love to pass everything on the road...)

We did a little shopping, a little browsing, some cheap pizza and the grocery store deli, and then to the Woodland Gardens. That's a great big pond (or a really small lake) in the middle of town that's home to a lot of ducks and a short but lovely walking trail. We arrived at just the right time of year...the babies were just hatched!

Of course we took some bread for the horde of ducks that's usually hanging around...

and we were even lucky enough to spot one of the elusive turtles that live in the pond! Woo Hoo!

By this time it's 1:30 and the weather had gotten really beautiful- warm and sunny....so this is the view I had this afternoon for about two hours:

The only substantial thing I cooked today was some "Stuffing Buns"; basically buns made with a box of Stuff 'n Such Stuffing Mix in the dough!

They made some great burger bunz to go along with some vegetarian chik'n patties for supper. I also baked some "hash browns" in the oven to go with it. (More kid friendly food.)

I could have done more, but I'm actually trying to stay off my feet more than ususal, as I'm almost certain I have stress fractures in both feet. (As a result of doing too much, too soon last weekend. It means I might not be doing any hiking for three or four weeks at least. Damn it! Don't you just hate when you go and do something stupid? And you have no one to blame it on but yourself?

Ooooooooh... i'm so sorry about your stress fractures. i SO know how those feel. And it is SO frustrating when yer active like you are (and so am i) to wait for them to heal... esp. when it's yer own fault (and mine!)... AUGH!

Groovy stuffing buns. How fun those must be and how incredibly decadent and tasty. Mmmmmmmm!
